Today’s Lambassador is Koji Fukuda, the Executive Chef at Pullman Tokyo Tamachi (@pullmantokyotamachi).

He’s sharing his "Special Lemon Sauce for Lamb Shabu-Shabu." Olive oil and lamb are a match made in heaven, the combination of aromatic herbs and lemon provides a refreshing flavour.

Ingredients (Serves 4)
Pokka Lemon juice: 60g

Soy sauce: 60g

Rice vinegar: 60g

Minced onion: 80g

Minced shiso leaves (Ooba): 5 bunches

Extra virgin olive oil: 100g

Cooking Method
Mince the onion and shiso leaves finely.

Mix all ingredients together in a bowl.

Tip: If you like it spicy, try adding Tabasco (60g) or minced green chili peppers (50g).
