Dan Espley began his journey in the meat industry more than two decades ago, starting with a supermarket apprenticeship while studying at the Hunter Institute of TAFE in New South Wales, where he was awarded Apprentice of the Year. He went on to gain broad experience across multiple areas of retail butchery before returning to the Hunter Institute—this time as a teacher, helping shape the next generation of butchers. A move to London was initially intended to be short‑term, but it soon became home after he helped establish and grow Provenance Village Butchers in west London. Today, Dan continues to work hands‑on as General Manager, still “on the knives” and deeply connected to the craft. Passionate about staying at the forefront of the meat industry, he takes great pride in mentoring apprentices who will carry the trade forward and deliver exceptional meat to appreciative customers.
